Olive Herb (Santolina rosmarinifolius rosmarinifolius 'Primrose Gem') has it all – great olive-like flavour for use in cooking; decorative looks; and tough as boots hardiness.
Pluck the feathery leaves fresh, and use in salads for an olive flavour, or throw into cooking casseroles and sauces for a Mediterranean tang.
Olive Herb revels in sun and heat, and can be planted in either a decorative container, the flower garden, or the veggie patch.
It is a drought resistant, water-wise evergreen shrub with feathery, deep green foliage and little yellow-button summer flowers. Ideal for gardeners with limited water.
It naturally grows as a low-wide, rounded shrub approx. 50cm. high x 60cm. wide. It can also be trimmed over with shears to make a formal mound, low hedge or formally shaped container plant.
The more you shear, the denser the bush will grow, and the finer the flavour of the olive tasting foliage.
The fresh young leaves have the best flavour.
