Garlic, or Allium sativum, is an essential of culinary life.
Garlic prawns on the barbie, made with fresh Australian prawns and Australian Garlic, are almost an essential national dish.
This Australian grown Garlic variety is mild rather than pungent. With flavour in abundance.
Garlic was long reputed to be the best way to deal with vampires.
But if you are short of vampires at your house these days - Australian Garlic is also delicious used in pasta, roasts, lamb and chicken dishes; curries, stir-fries and most Asian cuisines; salad dressings, sauces and marinades, as well as on the barbie.
Australian Garlic has a sweetness that also enhances the flavours of other popular herbs such as chives, basil, oregano, ginger, coriander, chilli and rosemary. So, no kitchen should ever be without it (and handy in case vampires do appear!).

How to grow delicious Australian Garlic
Plant Australian Garlic in a sunny area, in free draining soil.
Garlic enjoys a dressing of lime, especially in acid soil areas. And soil with good fertility. So, pre-prepare the garlic plot with well-rotted manure or compost, organic fertilizer, as well as a dressing of dolomite lime.
We recommend soaking the garlic cloves in a weak solution of Seasol overnight before planting. Which encourages them to sprout quickly and strongly.
Garlic is an insect repellent companion plant
Garlic is a slow growing crop and will occupy the patch for some 6 months until harvest.
So it is an ideal crop for growing in a large container, which also gives it the warmth and drainage it so enjoys. Or growing interplanted between rows of other, more quickly maturing vegetable crops.
Also taking advantage of Garlic’s ability to help repel insects such as aphids and thrips.
Garlic enjoys winter cold
Plant the individual Garlic cloves 2-5cm deep, pointy end up, spacing them 15cm apart.
Autumn and early winter is the best season for planting. Because Garlic bulbs need a period of cold during winter to develop fully. Unfortunately Garlic is not suitable to grow in tropical areas.
We recommend regular applications of quality fertilizer, such as Powerfeed, through the growing season.
When to harvest your Garlic
After some 6 months of growing, you will see the Garlic leaves beginning to brown.
So this is your signal to reduce watering and cease feeding.
Allow the Garlic patch to remain dry for about a week, and then harvest by digging out with a fork.
Hang the cloves to dry in a dim, dry place with plenty of air, and use cloves as required.
